lava_helper_configs.py: Rework monitors_reg_tests

Capture individual testcases, as LAVA "monitors" intended to work. Don't
limit capturing to particular testsuites, as specific testsuites used
depend on TF-M config params. E.g., either of secure or non-secure
testsuites can be disabled, there can be bootloader testsuite, etc.
